Grilling Steak Tips – Win Hearts with Succulent Steaks

Count the number of times you stared at the mere sight of grilled steaks and barbecues served on the table! Actually, it is all ‘the doing’ of the great Grilling art that gives BBQs and steaks their irresistible flavors and looks. You too can dish up lip smacking, shapely steaks if you follow some infallible steak grilling tips. By the way, grilling is not just a process, it is more about preparations and involvement, as you will understand from the following steak grilling tips:

Going ahead with the practical details of the grilling process, the first thing you will have to ensure is the quality of the raw material. Regardless of whether you are grilling fish or beef shoulders, tenderloin or sirloin steaks, the bottom line is fresh raw materials make the best steaks.

Steaks or fillets in the range 1.25 inches to 2.25 inches grill well. A little fat enhances the taste of a bar-b-q but too much of it causes the meat to shrink. Fat, likewise, adds to the palatability of the grilled steak, but then it also increases health risks. Therefore, a healthy tip would be to remove excess fat.

The next sets of steak grilling tips are regarding seasoning processes. You can season the steak with salt and pepper however, some prefer vegetable oil brushings along with salt and pepper seasoning or bbq rubs . Leaving the seasoning-coated steak for 30 minutes at room temperature will treat the meat, making it tender and augmenting its natural flavor. Two tablespoons of melted unsalted butter added to the seasoning will give the meat extra delicate flavor.

Now, getting down to the real grilling business, the first tip for you would be regarding the grill itself. You need to preheat the grill before placing the fish or meat steak. Follow this with oiling the grates if you are grilling some meat steak. For a fish steak, you can place a thin hole-poked foil on the grates, thus preventing the fish from sticking.

The most important section of steak grilling tips deal with ‘the doneness’ of the steak. A rare-done steak has tender, soft core enveloped in a seared outer layer. A medium-done steak is more evenly cooked with a brown exterior and semi-firm inner layers. Well-done steaks, on the other hand, are firm to the core.

The best way to ensure that a steak is cooked to your desired degree of doneness is to use a thermometer. Do not use forks or spatulas. They would puncture the steak causing the juice to flow out. A rare-done meat should be ready by the time the thermometer reads 140° on the Fahrenheit scale. Similarly, the ideal temperatures for medium-cooked and well-cooked steaks are 160° and 170° respectively. Remember, the cooking process continues even after you take the steak off the grill.

Equipped with these steak grilling tips you will be able to floor your guests. It would be worthwhile to keep some extra servings ready, for your guests might ask additional helpings of succulent grilled bbq sauce and steaks.

After cruising around the web today, looking for new things, I came across a statement in Wiki on the category Grilling.

Well here it is:

People who eat medium-well or well done beef were more than three times as likely to suffer stomach cancer as those who ate rare or medium-rare beef...

Yep I don't know why or how but this is true...

The next time you ask for your steak well done thinking it is better for you... think again before you kill all the flavor and TRIPLE your cancer risk....

If you wait long enough you will find every food has a positive and negative.

Bacon Makes everything better except Vodka!!

The perfect bacon strips in the Camp Oven:

Preheat oven to 400 Put parchment paper on your cooking sheet with a side lip

Put bacon flat on top of the sheet.

Sprinkle a little bit of brown sugar on the bacon

Cook 15 to 20 minutes to desired crispiness!

Each strip is flat and perfect for that Restaurant look.

Hint: Use hot pad and pull out of oven slowly to make sure you Don't spill out the bacon grease.

Homemade Rib Rub based on a Montreal Seasoning...MMM

Montreal Steak Seasoning Remix with 3 added ingredients

Mix all of this together

4 tablespoons salt use Real Salt if available
1 Tbs. black peppercorns
1/2 Tbs. dehydrated garlic
1/2 Tbs crushed red pepper flakes
1 Tbs dried thyme leaves
1 Tbs dried rosemary leaves
1 Tbs. dehydrated onion
2 Tsp. fennel seed

1 Tbs. fine ground coffee
1 Tbs. paprika
1 Tsp Celery Seed

This gives a nice dark color to the ribs.

Ingredients

3 small tomatoes,
1 to 3 habanero peppers,
4 peeled garlic cloves, and
¼ cup of water,
¾ cup of orange juice,
¾ cup of grapefruit juice,
salt and pepper to taste.

Directions

Sauté in a medium saucepan the tomatoes, peppers and garlic. When the tomatoes and peppers are tender and slightly brown, place the tomatoes in a blender. Now, remove seeds and stems from peppers and add to the tomatoes.

Pour the water, orange juice and grapefruit juice in the blender with the peppers and tomatoes and puree until smooth. Sprinkle with salt and pepper and serve with your favorite meat.

The BEST Greek Salad on the planet.... Top secret restaurant recipe!




MAKE it TONIGHT, super easy and the Best Greek Salad Recipe.

Ingredients


PART ONE:
1 head Lettuce, rinse shake dry and chopped. (Romaine is Best)
1 Medium Red Onion take off the bad looking stuff and slice thin.
2-3 Roma Tomatoes, cut into wedges
1 Small Jar pitted Kalamata Olives
1 Cup Feta Cheese, crumbled dice smaller
1 Small Jar drained Mezzetta Imported Garlic & Dill Peperoncini (Best)
1 large Cucumber, Sliced and cut again.

PART TWO:
1/2 Cup Olive Oil (extra virgin first cold pressed)
1 Cup Red Wine Vinegar
1 tsp. Garlic Powder or Fresh garlic clove minced 1-2
1 tsp. Dried Oregano
1 tsp. Dried Basil
1 tsp. Balsamic Vinegar
1 tsp. Black pepper
1 tsp. Dijon Mustard or spicy brown

The FINAL PART

1. Add in large serving bowl, all the "Part One" ingredients, cucumbers last.

2. In a side bowl or the feta container, mix together all "Part Two" ingredients.

3. Pour over the salad, cover and chill. You can serve immediately but if you wait a few hours it is much better. Stir the oil from the bottom to the top every so often while chilling. NOTE: It is even better the next day.

4. cover while storing, otherwise your refrigerator will remember for a few days what your made!

Use olive oil that is Extra Virgin and has not been open for more than a few weeks. Better get a fresh bottle... It is worth it...

MMM SUSHI AT HOME, try it!




OUTDOOR CHEF KURT loves to roll sushi.

Salmon tastes great in sushi and it is easy to make, click any of the light blue links to buy or look at the products we used.

You can use raw salmon after it has been frozen.The freezing process kills all of the bacteria in the meat so it is safe to eat raw.

I make my rice and then add some seasoned rice vinegar, this is called a sue, and when mixed with the hot rice it flavors it and also makes it into sticky rice which is perfect for rolling sushi.

Lay out my seaweed sheets and spread the rice evenly across the sheet.

leave about 1inch with no rice on one side so I can seal the roll when it is rolled up.I then lay my raw salmon in the middle of the spread out rice in small strips.

Now it is time to lay the seaweed sheet on my Bamboo Mat
and start a tight roll.

When i get to the 1inch bare spot I dip my finger into a small bowl of water I have on hand and wet the 1 inch section and then keep rolling the roll to the end and the wet part seals the roll tight.

Slice it into 1inch rolls and place on platter.

A bowl of soy sauce is great for dipping and adds a great flavor to the sushi.

RECIPE: ASPARAGUS ON THE TREAGER GRILL


This recipe was invented by OUTDOOR CHEF KURT in ALASKA at TALAVIEW LODGE this last summer.

I usually serve 3-4 spears per person.On a 1/2 sheet pan lay your spears .

Then cover liberally with balsamic vinegar and roll to cover completely.Fire up your TREAGER or any other grill and get it hot .

Then season spears with TREAGER veggie shake roll to cover completely with seasoning.Then place spears on grill and roll every 3 minutes to cook evenly Spears should be done in 8-12 minutes Taste for desired texture, take out early for a slight crunch and serve and be ready for people asking for more BON APETIT !!!!

RECIPE: Cooking light peanut butter pie, must try!


Peanut Butter Pie (MMMM)

Outstanding

20 servings (serving size: 1 wedge or more)

Ingredients

  • 1 cup powdered sugar
  • 1 (8-ounce) block light cream cheese, softened
  • 1 cup natural-style, reduced-fat creamy peanut butter (such as Smucker's)
  • 1 (14-ounce) can fat-free sweetened condensed milk
  • 1 12-ounce tub frozen fat-free whipped topping, thawed
  • 2 9-inch ready-made reduced-fat graham cracker shells
  • 4 teaspoons fat-free chocolate sundae syrup

Preparation

Combine the first 3 ingredients in a large bowl; beat with a mixer at medium speed until smooth. Add the condensed milk, and beat until combined. Stir in the whipped topping. Divide the mixture evenly between shells; chill 8 hours or until set (pies will have a soft, fluffy texture). Cut into wedges, and drizzle with chocolate syrup.

Note: We loved this pie frozen--its texture is more like that of an ice-cream pie.
