RECIPE: Tortilla/Enchilada Soup copy cat Chilis but with a twist!

Tortilla/Enchilada Soup- RECIPES BY PICTURES! 
This soup has lots of options, you can usually find most of these in your pantry or refrigerator. 

I was testing some ideas and made a simple little soup in the process...

Here is how it goes:

I get the Costco roasted chickens for $5 and filet off some of the chicken, cant tell you how much easier that is and it is good Hormone free chicken.

Use a 3 quart

Put it on your Camp Chef Stove


Put in some Chunky salsa about 2/3 Cup.
I can enchilada sauce (red Mild)
TSP Cumin
TSP Black pepper large ground
Fresh cilantro chopped about 1 handful
Chicken broth, open one can and pour about 1/2 (add more as needed to keep it from getting too thick)

Simmer for a while on lower heat.

Add in 2 cups of chicken (cooked)

and a 1/2 cup of shredded Pepper Jack Cheese
NOW- Decision time:
you can either add some (nacho or queso or some call it fake cheese) or
More pepper jack cheese.  The "fake cheese" actually gives it the Chilis look of the cheese color (hmmm  maybe that is how they do it)

More options:
Now is a good time to add 2/3 cup of instant brown rice (or white or spanish)
you will need some more Chicken broth to add (luckily you still have 1/2 can)
A couple of diced Jalepenos (don't go nuts)

Simmer some more...  

Shred 2 tortillas, and stir into the soup.

That is it.... 

Serve it in bowls and garnish with a few tortilla chips, or those little fancy tortilla chip strips. 



You can really make this fun by cooking your chicken on the twins and doing a big triple batch...

These look a bit more light duty, I have put these on they are more for the Car to the front door and not for any activity or walking. Is it just me or does this look like "Hannibal Lectors" Mask!

Deserts on the Dutch Oven Camp Chef Style

OUTDOOR CHEF KURT gave the kids at WILD WINDS RANCH a clinic on dutch oven cooking by making a couple of baked items.

I fired up the briquettes and got them going .


We used a double batch of brownie mix and a cherry chip cake double batch too.

Just oiled up my dutch oven pots good and warmed them up good and then poured in my mixes.

The kids almost got in a fist fight over who was going to lick the bowls.

Then I put my briquettes on top and bottom and waited for the magic to happen.

It took less than an hour and I had 2 beautiful baked dutch oven cakes .

The kids were very interested to taste the finished product so I iced and wrote on the cakes and it was game on .

the kids LOVED the cake and brownies so we taught them a little about dutch oven cooking they can use for a base of info when they want to try it for themselves.

Cooking for the 4th CHEF KURT style.... Kelly, I wish you would have been in Colorado

OUTDOOR CHEF KURT just got back from his biggest event ever.

I traveled almost 3000 miles in my truck round trip to Longmont Colorado from Redmond Oregon loaded to the top of the truck.

I had all of my smokers and grills and ovens and all of my other supplies. It looked like we were moving a restaurant!

The reception was at a private farm called Anderson Farms, where they have big events.

I was cooking all of the meat and poultry for a group of 250 people.

77# of black Angus prime rib, which I butchered up to make ribeye steaks ,
60# of baby back ribs rubbed and seasoned and wrapped in foil, then
55# of whole chickens that I cut into quarters and made a secret marinade for were prepared the day before to marinate overnight and be grilled and smoked the next day.

It was so good, we have a bunch more pictures from the next day.

And guess what it is off to the Wild Winds Ranch for the kids camps for the next two weeks.

I am available for a Central Oregon wedding reception and will hopefully be doing a Camp Chef Demo at Big R this weekend.

OUTDOOR CHEF KURT loves to roll sushi.

Salmon tastes great in sushi and it is easy to make, click any of the light blue links to buy or look at the products we used.

You can use raw salmon after it has been frozen.The freezing process kills all of the bacteria in the meat so it is safe to eat raw.

I make my rice and then add some seasoned rice vinegar, this is called a sue, and when mixed with the hot rice it flavors it and also makes it into sticky rice which is perfect for rolling sushi.

Lay out my seaweed sheets and spread the rice evenly across the sheet.

leave about 1inch with no rice on one side so I can seal the roll when it is rolled up.I then lay my raw salmon in the middle of the spread out rice in small strips.

Now it is time to lay the seaweed sheet on my Bamboo Mat
and start a tight roll.

When i get to the 1inch bare spot I dip my finger into a small bowl of water I have on hand and wet the 1 inch section and then keep rolling the roll to the end and the wet part seals the roll tight.

Slice it into 1inch rolls and place on platter.

A bowl of soy sauce is great for dipping and adds a great flavor to the sushi.

After further review

It got icy here in Portland, OR and I got to get a bunch more places to test my ULTRA TREKKER KAKO ICE CLEATS!

They really are the most comfortable cleats found so far, I almost forgot and walked back into the house. They surely would scratch the floors and make me test them in the dog house all night!!

They held best when you were pushing straight down and holding your footing. This is really important if you are going to be carrying something of need to push off or lift on the ice.

They did slide if you were trying to do a SLIDE TEST, it looked like Cat Claw marks on the ice since they were trying to grip, remember it is Ice!

They are now carrying these at Next Adventure and Andy and Bax in Portland, heard they sold out when the ice hit.

Overall these will last many years and compared to the Yak Trax they will hold up and get you across the ice and snow.

However always remember the word help.... the ice always wins if you are trying to do stuff you would do on normal ground...
